Spring is the season of new beginnings, bringing with the changing seasons, an abundance of fresh greens! Cook up a pot of wild rice and store in the fridge to add to salads for the week to increase your fiber & protein intake. The possibilities are many with this grain! Here is a quick and easy recipe that is tried and true at our dinner table.

ATG Wild Rice Salad

1 cup of cooked and cooled ATG wild rice

handful of your favorite greens (wild or domestic)

1/2 cucumber sliced into quarters

1/8 cup of red onion diced

1/2 red, yellow, or orange pepper diced

1/2 avocado diced

6-10 strawberries quartered

1/8c sunflower seeds

1/8 cup pumpkin seeds

Dressing of your choice

Instructions:

Assemble your salad by adding in all the fixings and mixing well. If you are planning on eating this right away, it’s nice to toss the dressing on 10-15 minutes before eating to allow it time to soak into the rice. If you’re planning on having left overs, leave the dressing to be added once people have their portions. Create a whole meal by adding a protein of choice on top! We like fresh walleye fillets!

These chocolate peanut butter drops are pretty tasty and super easy to recreate!

In a double boiler (aka pot filled with water and bowl sitting on top of said pot filled with water) add
• 1c of chocolate chips-we used Krisda semi sweet sugar free chocolate chips
•1/2c natural peanut butter
1 Tbsp coconut oil

Melt these three and stir together until blended.
To this heavenly mixture add:
•1c of puffed ATG wild rice
1/2c shredded coconut
1/2c walnuts
1/4 pumpkin seeds (or any seeds you like)
Stir it all together, drop onto parchment paper and put into the freezer to harden up. We kept ours in the freezer for storage as well but let’s be honest...they didn’t last a day!

Fun fact:

The wild rice you eat is actually the seed of the aquatic plant we harvest from. It is very high in protein and fiber, minerals, B vitamins, and low in fat. It’s a wonderful addition to your plate to maintain and support good health!
